The cocoa used plays a decisive role in determining the quality of chocolate. Chocolate can be made using bulk cocoa fine or flavour cocoa. Nevertheless, the highest quality standards can only be attained using pure fine flavour cocoas. Their multifaceted, intense aromas are truly unique and shape the flavour of pure, supreme-quality chocolate. The difference between the groups, which are classified by the International Cocoa Organization (ICCO), derives from the cocoa variety and its origin – and both determine the variety-specific flavour of a cocoa.
