Caramel is a mixture of melted sugar produced and it´s reaction productsw produced by strong and dry heating. Depending on the temperature, it changes colour from golden yellow to deep brown and develops the typical roasted aroma. Caramel tastes sweet to bitter, depending on the degree of roasting.
