Cocoa seeds in the ripe fruit are usually still inedible, bitter and of high astringency (causing a rough, »furry« mouthfeel). Seeds of certain, very fine flavoured cocoa varieties can be eaten without regret, as they are hardly bitter or astringent. Fresh cocoa seeds can be dark purple or creamy white - depending on the variety.
