Dutching

Dutch Process or Dutching, in German alkalizing, refers to the treatment of cocoa chips or cocoa mass with alkaline solutions (lye) to change the color and improve the taste. The process is also used to produce cocoa powder so that the powder does not settle so easily in the cocoa drink. It is usually not used in chocolate production.
