Pulp

The pulp is the whitish, sweet flesh in which the cocoa seeds are embedded. The pulp is mainly responsible for the aroma development of the fine flavour cocoa varieties. In fine flavour cocoa, it tastes particularly aromatic and sweet and fruity, like lychee. In some countries of origin, the pulp is used, for example, for cocktails, similar to the lime used for caipirinha.
