Refining

Refining is an extremely important process in chocolate production, because who likes sandy, grainy chocolate? The entire cocoa bean is ground so finely that the individual particles are no longer perceptible on the tongue/in the mouth. This is less than 30µm - thinner than a cling film. Only if the cocoa mass is below a certain particle size it is perceived as fine-melting and not as sandy.
