Truffles are a special kind of pralines: round and filled with a ganache. The term truffle is due to the similarity of the shape to truffle mushrooms, which are considered rare and valuable.
Spiky truffles are also distinguished by their characteristic »hedgehog« appearance. For this purpose, the round truffle ball is coated with chocolate and rolled back and forth with a so-called hedgehog fork. This creates the tips that make the truffle look like a hedgehog.
