EN Blöcke

1. Melting – for tortes, desserts and the like:

Chop the chocolate into equally sized pieces and gradually heat them over a pot of water to a maximum of 40 to 45 degrees Celsius. Then slowly stir it as it cools down to 28 to 29 degrees Celsius. This is how the chocolate will maintain its sheen.

2. Slicing – to garnish baked goods, hot chocolate and salads:

Place the chocolate in the basement (in a cool room). With a vegetable peeler or slicer, shave off thick or thin slices of the chocolate.

3. Grating – to garnish a cappuccino, hot chocolate and the like:

Place the chocolate in a cool room. Then use a coarse or fine grater to grate the chocolate.

4. Chopping – for chocolate biscuits, cakes, tortes and the like:

Place the chocolate in a cool room. Using a wide knife on a stable worktop, carefully chop the chocolate into pieces of the desired size. Then chop into smaller pieces if desired. 

5. Glazing – for chocolate cakes and tortes and the like:

Chop 100 g chocolate into equally sized pieces and gradually heat them over a pot of water to a maximum of 40 to 45 degrees Celsius. Then add 10 g liquid clarified butter to the melted chocolate and slowly stir the mixture as it cools down to 28 to 29 degrees Celsius. Glaze the cooled cake with this mixture.

I’m a fan of milk chocolate and, still, I enjoy the Peru fine dark chocolate with its mild, floral and fruity flavour.
