Since 2014, we have had our own fine flavour cocoa plantation 'Tres Equis - Finca de Cacao' in Costa Rica. Here we cultivate the best fine flavour cocoas, research new varieties and continue to expand the intensive exchange and knowledge transfer with our partners.
Our Managing Director Robert Rausch and our cocoa expert Dr Christina Rohsius tell you how Rausch came to Costa Rica, what motivated the idea and what our work and research looks like on the ground.

Der Beste Kakao in Costa Rica
Unsere Bemühungen wurden belohnt. Wir haben den Cacao of Excellence Award 2023 mit unserer eigenen Edelkakao-Plantage ›Tres Equis – Finca de Cacao‹ in Costa Rica gewonnen. Der Cacao of Excellence Award verschafft Produzent*innen globale Anerkennung und würdigt wie kein anderer die Aromavielfalt bei Kakao. Führende Expert*innen werden nun alle weltweit nominierten Rohkakaoproben sensorisch bewerten und die Besten in Paris auszeichnen.
Rausch hat die Vorauswahl gewonnen und sich mit dem Edelkakao der eigenen Plantage in Costa Rica ›Tres Equis – Finca de Cacao‹ qualifiziert. Ausschlaggebend waren schließlich die Aromaprofile der Kakaomasse, die ein Experten-Panel sensorisch analysiert und bewertet hat. Hier konnte unser Edelkakao einstimmig überzeugen.
Wir sind glücklich und stolz über diesen Erfolg und gönnen uns zur Feier des Tages ein Stückchen ›Costa Rica 84 %‹.

Since they grow in various mixed systems, they also care for the shade trees and maintain the fertility of the soil by applying organic fertilizers.

NEWS FROM COSTA RICA
We are currently in the process of completing the construction of an innovative, energy-efficient post-harvest station that will guarantee optimal conditions for the fermentation and drying of our fine flavour cocoa throughout the year. This consists of a drying system and a fermentation building. Learn more about it here.
2014
HOW EVERYTHING STARTED
For our Rausch Plantagen Schokoladen we only use pure chocolate from the original fine flavour cocoa. The desire for an own plantation arose. We were able to realize this project of the heart at the end of 2014 with our own fine flavour cocoa plantation ›Tres Equis – Finca de Cacao‹.
2015
THE AFFORESTATION BEGINS
For our fine flavour cocoa plantation we did not want to cut down rainforest, but show that sustainable cocoa can be cultivated even on depleted soils. Therefore, we decided to use pasture land that is no longer farmed, is hardened by horse or cattle hooves and is poor in nutrients and species. In total, we have planted more than 37 different species, which have turned the pastureland into a diverse, species-rich agroforestry system. This enables us to produce cocoa in harmony with nature.
2019
THE FINE FLAVOUR COCOA INSTITUTE
Together with our cooperation partner, we built a self-sufficient, environmentally friendly and mobile fine cocoa institute from five recycled sea freight containers on our estate in Costa Rica in summer 2019. The containers offer an optimal working and training location - for our team, young researchers and partners. We generate 100% of our own electricity on site. Constructed in such a compact and functional way, we can work together to develop new sustainable methods in cocoa cultivation.
2020
POST-HARVEST STATION
A cocoa tree needs 3-5 years before it can bear fruit for the first time. In summer 2020 we shipped our first harvest from Costa Rica to Hamburg. With the first bigger harvest we could start our post-harvest station around the topics fermentation and drying. The goal was to create an innovative, energy-efficient post-harvest station, which provides optimal conditions for the harvesting of fermentation and drying of our fine flavoured cocoa guaranteed.
2022
Latest news
Fermentation facility: In the new fermentation unit, we use a cascade system in which the fermentation boxes are arranged in a staircase. This enables optimal turning of the approximately 500 kg of cocoa per box.
Drying: By installing sliding roofs and using stored solar energy, we combine three drying methods in one system.
Rope pull: A solar-powered rope pull was installed to receive the fresh fine cocoa seeds at the fermentation building.
By planting so called helper plants, grassland has become a diverse plantation with many plants and animal species. In total we have grown over 150,000 shade trees and plants. Among other various precious woods and fruit plants, such as banana, grapefruit, guava, papaya and many more. You will find a detailed overview of this here.
OUR FINE COCOA VARIETIES
In the middle of this agroforestry system on our own fine cocoa plantation in Costa Rica, the best varieties in the world are cultivated. From a multitude of fine cocoas, we selected the 9 best, which we use for our 'Rausch Plantagen Costa Rica 84 % Cuvée Prestige'. We present our varieties:
el fuerte
He is robust and the brother of The Cheerful. His pulpaaroma is flowery sweet.
el armónico
It has round, smooth fruits and oval seeds with a strong taste. Its pulpaaroma is fruity and spicy.
el fino
It is round shaped and has medium to large fruits. Its seeds are large and many of them are light refractive.
Its pulpaaroma is fine and floral.
el pequeño
It has a small tree growth and medium sized fruits and seeds. Its pulpaaroma is sweet and fruity.
el alegre
He is strikingly yellow and the brother of The Strong. His pulpaaroma is floral and fruity.
el exótico
It has medium to large fruits and light refractive, pink and purple seeds. Its pulpaaroma is fruity and flowery.
EL GUAPO
It has large and intensely shiny fruits. A typical Trinitario with light refracting pink-violet seeds. Its pulpaaroma is sour and fruity.
EL FIEL
It has elongated, dull fruit and lightly refractive, pink and purple seeds. Its pulpaaroma is fruity and spicy.
El REFRESCANTE
It is particularly productive, has dull fruit and is a typical Trinitario. Its pulpaaroma is sourly spicy.

It has a small tree growth and medium sized fruits and seeds. Its pulpaaroma is sweet and fruity.
