The degree of fermentation provides information about the duration as well as the method of fermentation. If the degree of fermentation is insufficient, the seed tastes bitter and astringent, while overfermentation can cause off-flavour notes. As a general rule, it is measured by the rate of well fermented seeds which can be determined by their darker colour.
